One of the most annoying limitations of the iOS app for non-subscribers is the inability to listen to the video with the screen locked. I am unwilling to pay each month just for that feature and ad removal, but now the former is no longer an issue. With the video playing, switch to PiP (Picture in Picture) mode, (this will only work in PiP mode) which may need to be enabled in the YouTube settings. Lock your phone using the power button. The video will stop BUT you can restart it through the iOS Control Center, or via your headphones, or Apple Watch. Give it a try! Oh, and if there are any YouTube developers on here, please keep our secret and do not find a fix!
