Fry sausage, drain and set aside.. Cook grits in boiling, salted water for five minutes.. Add butter and cheese to grits. Stir until melted. Remove from heat. Add eggs, milk and sausage.. Pour mixture into 9 x 13“ casserole dish and bake at 350° for 30 to 45 minutes.. Top with bacon crumbles and sprinkle with paprika.. (Freezes beautifully)
