How to make pasta

- Ingredients
- 100g (3/4 cup) of flour
- 1 egg
- 70g (5 tbsp) of ricotta cheese
- 13g (1 tbsp) of parmesan cheese
- 1 clove of garlic
- I leaf of thyme
- 20g (1.5 tbsp) butter
- 4 sage leaves
- Instructions
- Pasta dough
- Move 1/4 of the flour to the side, this will be used to flour the dough and surface later
- With the remaining 3/4 of flour, make a hole in the middle for the egg
- Put the egg in the hole and scramble it with a fork, slowly adding flour until it becomes a dough
- Use your hand to work the dough over and over by pressing and spreading the dough away from you on the surface, folding, and repeating. Add flour to reduce sticking when needed
- Ball up the dough and put it in a bag for 30 min to an hour to rise (It will not rise much)
- Use a rolling pin to flatten out the dough wide enough to fit two spread hands over it. Keep flattening and rotating to produce a big circle, sprinkle with flour when needed
- Ricotta filling
- Mix together ricotta, parmesan, garlic, thyme, salt, and pepper
- Making ravioli
- Cut the sheet of dough in half
- Using half of the sheet, put filling in small clumps along the flat edge of the dough, with about a finger space between the clump and the edges and two-finger space between the clumps
- Using water, wet a finger and apply to all edges around filling
- Fold over the dough around the filling. Press between the clumps and along the edge to create your ravioli and try to remove any air pockets inside
- Cut the excess dough off leaving a one finger space on the edges around each filling
- Use a fork to seal the raviolli
- Making pasta
- Use other half of flattened dough
- Fold in half, unfold, fold each of those halves in half, and then fold those halves together
- Cut whatever width noodles you want
- Use whatever leftover dough you have to make any size pasta
- Butter and sage
- Melt the butter and sage over low heat
- Add a shot glass amount of pasta water
- Add cooked pasta to butter, sage, and water
- Serve
